Casey's Sugar-free Chocolate Cake Pops with Cream Cheese Frosting

HOUSTON (KTRK) -- This is a yummy recipe for those on sugar restricted diets. It only takes one bowl, which makes it an easy recipe for chocolate lovers. Once they're topped off with cream cheese frosting, I promise you won't miss the sugar.

Casey's Sugar-free Chocolate Cake Pops with Cream Cheese Frosting

Ingredients:

  • 3/4 cup unsweetened Dutch cocoa powder
  • 1/2 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 cups stevia (powdered, not liquid)
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup 2% milk with 1 tablespoon lemon juice (this is a substitute for cup buttermilk)
  • 3/4 cup warm water
  • 3 tablespoons safflower oil
  • 1 teaspoon pure vanilla extract

Directions:

  1. Mix the dry ingredients first, then add all the wet ingredients. Mix for several minutes until smooth.
  2. Refrigerate batter for about thirty minutes before using in cake pop maker.
  3. Cook for approximately 4 minutes in cake pop maker.
  4. Cool on a rack.

Cream Cheese frosting:

  • 8 oz 1/3 fat cream cheese
  • 1/4 cup stevia
  • 1 tablespoon vanilla

Directions:

  1. Mix all ingredients with a hand mixer until smooth.
  2. Frost cooked, chilled cake pop balls.
  3. Insert cake pop stick and decorate with sprinkles, if desired.
  4. Chill decorated cake pops until frosting is set.
